Our complete flow hoods don’t come fitted with a pre-filter as standard.
If you want a pre-filter installed before shipping please order the appropriate size pre-filter with your unit and ask for it to be installed before shipping by writing in notes at the checkout.
*ModelsĀ 31×31, 61×32, and 61×61 are all single intake fans, so we recommend ordering a 31×31 pre-filter and just sitting it over the fan intake, rather than installing it. It is much easier to clean from the outside. If you would like to do this, make sure you write in the comments section “Do not install pre-filter” so our staff knows not to do this, as they may assume if you order a 31×31 complete flow hood and pre-filter.
FFU units are air handling units with a built-in speed controller that filter down to .3 microns just like the flow hoods
cons
they don’t flow as much air as the complete flow hoods.
They dont have a work area to work inside of
Pros
they are a cheaper starting point to get a larger work area for working with bags standing up
Complete flow hoods
These are the same filter fan combos we have been using in our farm for 15+ years
cons
do cost more
need a 61×61 for working with Bags standing up minimum
Pros
Work area to work inside of
plenty of airflow – our latest batch of fans have built in speed controllers
thicker filters so last longer
we use these same setups in our farm

Mushroom fungus is susceptible to other fungi outcompeting it
in the air around you has millions/billions of spores of other fungi and other things.
when you make a nice nutrient-filled media/grains/Substrate if any of those other fungi spores land in your work they will grow like wildfire and outcompete your mushroom fungus
a flow hood filters all the spores and particles in the air so when you open your work in the sterile airstream there’s nothing in the airflow to land in your work and start growing
this allows you to drop only your clean mushroom fungus into your work and seal it
something to keep in mind
– your hands and arms need to be clean while working, as things can land on you and blow off into your work while you work
Another option if you don’t have the funds for a flow hood, make a “still airbox” its a great place to start
but a common thing always said to us by customers (I don’t know how I ever lived without a flow hood)

The most common error code that comes up is ER3
- Er3 = Humidity sensor short-circuit
If you have the error code āER3ā appear in the humidity display it means that it’s over 99% humidity, it is too wet.
When the sensor is wet, it could be that you have it set too high, or there must be a bit more humidity lately and your current setting needs adjusting because it is overrunning. When you get extra humid weather it can make it go much higher with humid air coming into the room from outside.
When this happens, turn your setting down a few % lower and it should dry out and start reading correctly again.
Other error codes that can come up include:
Er0 = Error in memory – Turn off the power and reset.
Er1 = Temperature sensor short-circuit – This means that your room is too hot.
Er2 = Temperature sensor disconnection – This means you have a damaged sensor cable.
Er4 = Humidity sensor disconnection – This means you have a damaged sensor cable.
Faran Humidifiers can be connected to mains water by simply removing the grey bit of hose poking out the bottom push-in fitting in the water tray and pushing in some 1/4 inch hose
**if connecting to mains water its important to add a pressure reducer**
you can also purchase a fridge connect kit from bunnings which connects in the same way and add in an in-line carbon filter to make sure your water quality is at its best
if your just connecting to eg a 20L water tank you wont need a pressure reducer
How many grams your mushroom kit yields per harvest varies between the type of mushrooms, its environment, and how the end-user looks after it. Below is a rough guide based on our experience and consumer feedback:
- Side Fruiting Mushroom kits: Approx 300-700 grams per harvest (2-4 flushes, some reports of 7+ have happened)
- Top Fruiting Mushroom Kits: Approx 300-700 grams per harvest (2-4 flushes)
- Shiitake Mushrooms kits: Approx 200-600 grams per harvest (2-4 Flushes)
The mushroom block is the mushroom’s nutrients and food. The first couple of harvests will yield the most and then the amount will decrease each round as the mushrooms break down the block.
Start with oyster mushrooms, whites and blues are the most popular during winter or pinks and tans in autumn and spring.
The GROWING ON PAPER PELLETS GUIDE is an easy way to grow with spawn, this method is available for download on our INSTRUCTIONS PAGE
Alternatively our READY TO FRUIT KITS are the easiest way to start.Ā All you need is a cool, shaded, humid place with enough light to read a book to fruit it; places like your laundry or bathroom with the door shut (if on the shaded side of your house).
Yay! Welcome to the world of mushrooms :D
If you have never fruited a Gourmet or Medicinal mushroom before we recommend starting with a Ready to Fruit mushroom kit.
The best mushroom kits to start with are any of the oyster varieties as they provide a quick and satisfying harvest with pleasing yields.
Every mushroom type grows at a different rate, (even between each of the oysters), Eg Lions Mane provides a good harvest, however, grows slower.

A Ready to Fruit mushroom kit is:
A mushroom kit is a mushroom kit that is ready to fruit. All of the hard work of mixing the spawn and substrate, cooking, and incubating has been done. All you need to do is cut a hole in the box, slice an X in the bag, and mist daily 2-3 times watching your mushrooms grow.
Mushroom Spawn is:
Mushroom Spawn is the prepared mushroom culture that needs to be mixed with a substrate and other materials to fruit.

Are you a beginner? We suggest beginning with the paper pallets method as it is the most simple with satisfying results.
Oyster mushrooms are the easiest and most satisfying to grow. They grow in clusters, are quite meaty, and can grow quite large depending on the environment although taste better at a mid-size.
The easiest way to grow them is with a ready to fruit mushroom kit. An oyster mushroom kit can have between 4-8 harvests each block, yielding from 300-700 grams per harvest. The first harvests yielding the most and then less each time as the mushrooms break down the block (which is its food source).
If you like to try your hand at DIY Spawn, the most simple way is the Paper Pallets method. This is available for download on our instructions page.

**Please be wary of some cheaper pressure canners on the market. Many only reach 7-8PSI and this is not hot enough to sterilize things properly.

Presto Pressure Canner
Pressure canning is the only method recommended safe by the U.S.D.A. for low-acid foods such as vegetables, meats and fish.
The easy-to-read gauge automatically registers a complete range of processing pressures. Air vent/cover lock allows pressure to build up only when the cover is closed properly and prevents the cover from opening until pressure is safely reduced.
This PrestoĀ® Pressure Canner also doubles as water bath canners for preserving fruits, jams, jellies, pickles and salsas. Constructed of extra-strong, warp-resistant aluminum and suitable for use on regular and smooth-top ranges.
Includes cooking/canning rack and complete instruction and recipe book. -gopresto.com
All American Pressure Canner
Wisconsin Aluminum Foundry has manufactured All American Pressure Canners since the 1930s. This line of canners has offered the best and safest method for home canning from its creation all the way up to the present. The U.S.D.A. recommends pressure canning as the only way to can meat, fish, poultry, and all vegetables.
These pressure canners have the capacity needed not only for canning, but also for preparing large quantities of food and pressure cooking inexpensive meat cuts to juicy tenderness in a short time. Only the All American Pressure Canner features an exclusive, precision machined “Metal-to-Metal” sealing system. Positive action clamping locks align the cover to the base forming a steam tight seal. Because no gasket is involved, the cover is always easily opened and closed.
The All American Pressure Canner makes it easy to can fish, meat, vegetables, and fruits and is the only method that the U.S.D.A. recommends for low acid foods. All models feature a readable pressure gauge for accurate pressure control. – allamericancanner.com
This is called Mycelium. Mycelium is the vegetative part of a fungus or fungus-like bacterial colony, consisting of a mass of branching, thread-like hyphae. This is a good sign that your mushroom block is healthy and is what the mushrooms grow from. It can vary in colour between mushroom types. Some will appear a thick and vivid white while others will be more subtle.
- Morchella angusticeps mycelium, as it matures turns brown and will start to look like fairy floss on top
- Hericium coralloides mycelium looks very bare as its a very fine wispy mycelium and is hard to see with the naked eye
- Lepista nuda mycelium is thicker and will start to grow purple when it matures
All mushroom spawn, if you look closely through a microscope will have a white coating around the grain, some you can see better than others.
All species of fungi and their mycelium are different and shouldn’t be treated the same.
All products we send from our facility are grown and ready to use.
First up if you haven’t been spraying with cooled boiled water this can cause other things to grow, eg: Untreated tank water.
Being exposed to the elements in your growing area in between flushes while the block is resting in a weakened state can allow foreign elements to start growing.
All Spawn and Ready-to-fruit Kits we send from our facility are grown and ready to use. All mycelium looks different, some mushroom types are very hard to see for the untrained eye.
When your spawn arrives unbox it right away and check over.
If it has broken up during shipping ( it will be all mixed up and will look like bare seeds).
Stand the bag up and sit somewhere dark around 20deg to recover for 1-2 days. (Some will grow back thicker and clearer than others, not all mycelium is/looks the same).
After this, store the bag in the fridge at 1-4 deg for most types and they will be fine for 4-8 weeks.
Some types like, Pink Oyster, Straw Paddy, Wood Ear can only be stored at 9-11 deg, colder than this and they will start to slowly die within 3-4 weeks, these warmer types we suggest using right away within 1-2 weeks of arriving.
This won’t affect your mushroom kit growing at all as they get cut open to fruit the mushrooms anyway.
Please follow the instructions as per our download.
Email us your original order number and photo of the damage to info@masonjarsandmushroomgroup.com.au and we will assess.
If you are only using a low tek substrate Eg paper pallets or straw, if you can use the spawn within a week from receiving, it should be fine.
Otherwise, if you are doing a fully sterilized substrate it may need to be replaced.
Email us your original order number and photoās to info@masonjarsandmushroomgroup.com.au

As we head into the warmer summer months we do suggest express shipping as the heat can affect your mushroom product if in higher temperatures. We suggest purchasing summer varieties of mushrooms such as pink oysters, yellow oysters, or Queensland white oysters during this time.
During autumn, winter, and spring (depending on where you are located in Australia), the mushrooms thrive and transit is not an issue.

They grow well on hardwood timber. In Australia, they love Eucalypt varieties.
As a rule of thumb keep an eye on the caps. They are best consumed when the edges are facing down. As soon as the edges start to curl upwards they are getting ready to seed, this is where you might find little dust spores spreading around the mushrooms. Some people are okay with spores, others may have a reaction to this. Do not consume if the mushrooms have become wilted and soggy.

the most important thing for storage of your Pre sterilised substrate, grain or agar plates clean and free from problems is
this is for inoculated and uninoculated substrate, grains or agar plates in there sealed bags
Stable temperatures between 18-20 deg (using a temperature controller to maintain a good stable temperature will ensure no excess sweating)
- once you get over 22deg the heat will cause excess sweating and moisture will build up
- or if you have large temperature swings this will cause excess sweating
- too much excess moisture will pull in problems through any micro holes
- too much excess moisture will wet the filter and things can grow through wet filters really quickly if in a closed space
with constant light airflow 1 -2 room changes per hour
- use a fan with a speed controller
- add a pre filter at a minimum that filters down to .5 micron this will keep your space dust free and most spores out of your space
- or use a HEPA filter as well as a pre filter and it will keep everything out
- the constant moving air will keep things dry
Keep good spacing between your bags and products
no lighting is needed
If you can not maintain good airflow and stable cool temps below 20 deg we suggest waiting until the cooler months to do any growing as this will save you time and money :)
Jars and Bags and Agar plates are made to order every week to ensure freshness and quality
They are 100% sterile and processed in our commercial autoclave
core temps are monitored during cooking to ensure they hit the correct temperature for the correct time (no guesswork assuming its cooked correctly)
they are then sealed in ourĀ custom class 100 mushroom laboratory and we place open nutrient-filled agar plates around the room to ensure there’s no chance bags could be contaminated while sealing
directions of use
Unbox as soon as they arrive and rest for 1 week,
keep in a dark cool area below 20deg
(not the fridge, fridges are only for putting your mushrooms to sleep for storage)
(not in temps over 20,Ā 22-24 deg starts getting too hot and the bags will sweat and pull problems in) – Stable cool temps will prevent sweating
if its too warm in your state / area wait until cooler seasons to grow
it must have good airflow (so not locked in a cupboard or sealed/closed box)
filters work only when they are dry!
so if you leave them sealed in a box or in a closed space to long they will get wet from the grains then anything can grow in through the filter on the moisture, and once 1 bag or jar contaminates it will jump from bag to bag / jar to jar
if no signs of problems show up inoculate (sometimes during shipping problems can happen)
email photos within 2 weeks of receiving if you have any issues before inoculation and we will replace any affected during shipping
Quarantine information for our Western Australian and Tasmanian customers:
Aussie Mushrooms kits and spawn have been approved to be imported into these states and all orders have our permit attached to them.
TAS customers:
ā¾ Importers are required to fill out a letter of intent to import, we do this as a free service to our TAS customers.
WA customers:
ā¾ In the last few years, Western Australia has changed its species lists of what can and cannot be imported into WA – Not all mushroom species we sell can be imported at this time.Ā When they updated their lists, many species were missed off their new system and cannot be ordered until they get it updated. We are working toward amending this to allow all of our species to be sent to your state.
All currently permitted fungi species are listed on:Ā Western Australian Organism List (WAOL)
Permitted fungi species include Oyster Mushrooms, Shiitake, Enoki, Nameko, and Turkey Tail.
We are not currently permitted to send: Ganoderma, Hericiums, or Wood Ear fungus. Stropharia
Please note:
ā¾ Any items ordered that should not be ordered will incur a fee for refunds. If we miss it and it is stopped and destroyed we cannot refund the spawn cost.
ā¾ Sometimes WA customs will inspect the packages and charge an inspection fee, unfortunately, this is something we cannot avoid. It doesn’t happen often but please be aware it could happen to your package.

Shiitake mushrooms need a long period of rest between flushes to reabsorb more nutrients in order to fruit again.
Step 1, after you have harvested your first flush of mushrooms, make sure all the bits of mushrooms are off the block
step 2, place somewhere dry outside of your fruiting container and that’s it, rest somewhere dry and dark and cool with good airflow
if its wet other things will try and grow on the block.
step 3, after the 6 week rest period, soak in water overnight and go again like your first flush, just don’t mist as often as the first flush, you want to try keep the surface of the block dry so other things that have landed on it don’t start to try and grow.
a few things to be mindful off
Shiitake are very slow-growing, even though their mushrooms grow really fast from when they first ‘popcorn’ to final maturity/ready to harvest; There is a slow build-up to that final phase of growth happening out of sight.
*Did you know that it takes more than 3 months of incubating our kits before we send them to you ready to grow?
The first couple of harvests will yield the most and then the amount will decrease each round as the mushrooms break down the block.
just spray the plastic only
make sure all the bits of mushrooms are picked off the substrate
do not put your block in the fridge, just leave it where you were fruiting it.
(if you put it in the fridge it will go to sleep and leave the mushroom mycelium vulnerable to other things starting to grow on it)
after 2 weeks (or if mushrooms start growing again before then)Ā start misting again
-each species and depending on the temperatures will take different times to re-flush
later flushes do take longer to come through so hang in there they will come when ready :)
Another option people like to do
after the 2 weeks
wrap the block up in cling wrap
then cut a new x on the opposite side you fruited on last time
if your block feels very light it may need a soak in cooled boiled water (or distilled) overnight
after 2-3 flushes it may need to soak in water to rehydrate the block, (use cooled boiled or distilled or spring water)
Mushrooms are mainly water so more water = more mushrooms
submerge the block in water for 12-24 hours, and drain all the excess water away, when you start misting again you wont have to mist as much as the block is full of water again
- the record so far is 8 flushes from an oyster block can you beat it :)

If you are not ready to fruit or use your spawn please put the bag(s) in a clean cold fridge (1-5 degrees) until you are ready. Most species are fine for 1-2 months. This will put the mushrooms to sleep.
NOTE: Pink oysters and hot weather types need to be used immediately.
If you have purchased your mushroom kit or spawn as a gift. Keep it in the fridge until you are ready to give.
Please Note: Mushrooms are a live culture, if you don’t put them in the fridge they will grow out of the box on their own.

This will not affect the growth of your mushroom kit. The box is aesthetic.
